all that's up this saturday

A good start to a good Saturday - Buttermilk Wheat Pancakes with Strawberries! Mmmm...recipe below. Then some painting and then some creative tinkering. Last year I painted probably a hundred or so block letters with the idea that folks would like to buy them to spell out words/names. Two craft fairs later I came to the conclusion that this was something that just wasn't flyin' off the table. To avoid dragging them all out to a third fair, I used up most of the letters to spell out my own words, which I've strung on string to be hung. The first word, "Kiss". Ahhh, ain't it sweet? Let's see if these go anywhere.

Now, for that pancake batter:

1 cup flour
1/2 cup whole wheat flour
1 tablespoon sugar
1 tablespoon packed brown sugar
2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 cup liquid egg substitute
1-1/2 cups plus 2 tablespoons buttermilk
1-1/2 teaspoons vanilla extract
2-1/2 tablespoons canola oil
thinly sliced strawberries

Mix all the ingredients, pour onto a hot griddle and place strawberry slices on top of each pancake. Flip. Serve. Eat. Have seconds.

Those look delicious! I think I'm going to give them a try. I hope they still work with the boxed pancake mix though! I'm to add the strawberries and some chopped up macadamia nuts! I've done it with bananas and blueberries, but never thought to try it with strawberries! (Roy thanks you in advance...he loves pancakes!)
