Peanut Sauce

This Peanut Sauce recipe has still got to be one of my favorite recipes. Of course I substituted the chicken broth for vegetable. And I upped the garlic. It was very, very garlicky. Yum. Now I wish I'd made more so I would have had left-overs for lunch. Still not quite as good as noodles from Saffron, but pretty darn close.

Hey! This is getting scary! I just made a similar cold soba peanut salad, but (surprise, surprise...) ours turned out kinda gross! Thankfully we did like the salad dressing- so we've since made it again and again and used it with green leaf lettuce, cilantro, green onions, mandarin orange slices, edamame (soy beans), black sesame seeds, chopped peanuts and won ton chips! I think we're using the same cookbook! ;-)
